1. Layer the Gelato

In a round bowl, layer the strawberry gelato on the bottom, followed by the pistachio gelato, and finally the chocolate gelato. Make sure to smooth the top with a spatula. Cover and freeze for at least 4 hours or until firm.

2. Prepare the Chocolate Shell

In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

3. Coat the Gelato

Once the gelato is firm, carefully remove it from the bowl and place it on a wire rack over a baking sheet. Pour the melted chocolate over the gelato, ensuring it's fully coated. Allow the excess chocolate to drip off.

4. Chill and Serve

Return the chocolate-coated gelato to the freezer for another 30 minutes to set the shell. Serve with a dollop of whipped cream, a sprinkle of chopped pistachios, and chopped strawberries on top.
