    In a large pot, combine the white wine, capers, pimentos, lemon juice, salt, and black pepper. Bring the mixture to a gentle simmer over medium heat.

    Poach the Salmon

    Carefully place the salmon medallions into the pot, ensuring they are submerged in the liquid. Cover the pot and let the salmon poach for about 10-12 minutes or until the salmon is fully cooked and flakes easily with a fork.

    Serve

    Once cooked, carefully remove the salmon medallions from the pot and place them on a serving platter. Spoon some of the poaching liquid over the salmon and garnish with extra capers and pimentos if desired.
