Make the Dough
In a large bowl, mix together flour, sugar, cocoa powder, salt, and cinnamon. Add melted butter, egg white, and white wine or vinegar. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Dough
After resting, divide the dough into quarters. Roll out each piece very thin (about 1/8 inch thick). Cut into 3-inch circles using a cookie cutter.

Fry the Shells
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Wrap each dough circle around a cannoli tube, sealing the edges with a little water. Fry in hot oil until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.
