Prepare aromatics

Peel and thinly slice the ginger. Smash the garlic cloves. Measure miso, soy sauce, mirin, sesame oil, and set aside. Rinse the dried shiitake mushrooms briefly under cold water.

Infuse broth

In a large pot, combine 8 cups vegetable broth, sliced ginger, smashed garlic, dried shiitakes, and kombu if using. Bring to a gentle simmer over medium heat. Reduce heat to low and simmer gently for 15 minutes to infuse flavors, partially covered.

Finish miso base

Remove kombu after 10 minutes if added (to avoid sliminess). Remove shiitakes and set aside to slice later if you want mushroom topping. Ladle about 1 cup of hot broth into a small bowl and whisk in the white miso paste until smooth (this prevents clumps). Stir the miso slurry back into the pot. Add soy sauce, mirin, sesame oil, and black pepper. Keep broth on the lowest heat — do not boil after adding miso to preserve its probiotics and delicate flavor.

Fried Tofu & Dumplings

Prepare tofu

Press firm tofu for at least 15 minutes to remove excess water (wrap in a clean towel and weight it). Cut pressed tofu into 1/2- to 3/4-inch cubes. Toss tofu cubes gently with cornstarch and 1/4 tsp salt until evenly coated.

Fry tofu

Heat 2 tablespoons neutral oil in a nonstick or cast-iron skillet over medium-high heat. Add tofu cubes in a single layer (work in batches if needed). Fry until edges are golden and crisp, about 3–4 minutes per side. Transfer to a paper-towel-lined plate and keep warm. If you prefer oven-baked, roast at 425°F (220°C) for 20–25 minutes, turning halfway.

Cook dumplings

If using store-bought dumplings: heat 1 tablespoon neutral oil in a skillet over medium heat. Place dumplings flat-side down and sear until bottoms are golden, ~2 minutes. Add 1/4 cup water, cover and steam 4–5 minutes until cooked through. Remove lid and allow any excess water to evaporate so bottoms crisp slightly. Alternatively, pan-fry or steam according to package instructions. Season dumplings lightly with a pinch of salt or a splash of soy sauce.

Prep vegetables

Cut broccoli into bite-size florets. If using frozen corn, measure and thaw slightly. Drain and rinse canned bamboo shoots. Rehydrate wakame by soaking in warm water for 5 minutes, then drain and squeeze out excess water. Slice scallions into thin diagonal rounds. Slice any reserved shiitake caps from broth infusion if using.

Blanch broccoli and corn

Bring a separate pot of water to a rolling boil. Add broccoli florets and blanch 1–2 minutes until bright green and slightly tender. Use a slotted spoon to transfer broccoli to an ice bath (or cold water) to stop cooking and preserve color. In same boiling water, blanch corn 30–45 seconds if desired and add to ice bath. Drain well before assembling.

Cook noodles

In the same boiling water (after vegetables are removed), cook vegetable ramen noodles according to package instructions (usually 2–4 minutes for fresh; 4–6 for dried) until al dente. Reserve 1/2 cup of the noodle cooking water, then drain noodles well.

Assembly & Finishing

Reheat broth and adjust seasoning

Bring the miso broth back to a gentle hot (do not boil). If seasoning needs adjustment, add more soy sauce (to taste) or a splash of reserved noodle water for body. Stir in 1 tsp chili oil if using for heat.

Divide noodles and pour broth

Divide cooked noodles evenly between 4 bowls (approximately 1 cup cooked noodles per serving). Pour hot miso broth over the noodles, distributing aromatics and any sliced shiitake evenly.

Arrange toppings

Top each bowl with: 3–4 fried tofu cubes, 2 vegetable dumplings, a handful (about 1/2 cup) of blanched broccoli, 1–2 tbs corn, 2 tbs bamboo shoots, 1–2 tbs rehydrated wakame, a few nori strips, and sliced scallions. Sprinkle each bowl with toasted sesame seeds. Offer extra soy sauce and chili oil at the table.

Serve

Serve immediately while hot. Encourage diners to mix miso broth with noodles and toppings. Leftover broth (without noodles) can be refrigerated for up to 3 days.
