Prepare eggs
Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until the mixture is homogeneous and slightly frothy (about 20–30 seconds). This aerates the eggs for a tender omelet.

Preheat pan
Place a nonstick skillet (8–10 inch) over medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan evenly. The butter should foam but not brown; adjust heat so it stays hot but not smoking.

Cook eggs
Pour the whisked eggs into the hot pan. Let the eggs set undisturbed for about 10–15 seconds until the edges begin to set. Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so the uncooked egg flows to the edges. Repeat until the eggs are mostly set but still slightly glossy on top (about 45–60 seconds total).

Add cheese and finish
Evenly sprinkle 3 ounces grated Monterey Jack cheese over one half of the omelet. If using, sprinkle 1 tablespoon chopped fresh chives over the cheese. Tilt the pan away from you and fold the omelet in half over the cheese using the spatula. Let the folded omelet cook another 20–30 seconds so the cheese melts through but the eggs remain tender. If you prefer a fully melted center, cover the pan briefly for 20 seconds.

Plate
Slide the omelet onto a warm plate, seam-side down. Let it rest for 30 seconds so it sets slightly before serving.
To serve

Warm the cornbread if necessary: microwave a slice for 15–20 seconds or warm in a 350°F (175°C) oven for 5–7 minutes. Spread 1 tablespoon butter on the warm cornbread if desired.

Serve the Monterey Jack cheese omelet immediately with the warm cornbread on the side. Optionally garnish the omelet with a few extra chopped chives or a grind of black pepper.
