    Prep eggs

    Crack the 4 large eggs into a bowl and beat lightly with a fork until the whites and yolks are combined. Stir in 1/4 tsp of the kosher salt and 1/4 tsp of the black pepper.

    Cook eggs

    Heat a nonstick skillet over medium-low heat and add 1 tablespoon unsalted butter. When the butter is melted and slightly foaming, pour in the beaten eggs. Cook gently, stirring occasionally with a rubber spatula, until eggs are soft, creamy and just set — about 3–4 minutes. Remove from heat immediately to prevent overcooking.

Tortillas & Assembly

    Warm tortillas

    While the eggs cook, warm the tortillas. Heat a separate dry skillet over medium-high heat. Warm each tortilla 20–30 seconds per side until pliable and lightly charred in spots, or wrap the stack in a damp paper towel and microwave 20–30 seconds.

    Cheese

    Place the warmed tortillas on a work surface. Sprinkle about 1/4 cup shredded cheese onto each tortilla (total 1 cup across 4 tortillas).

    Assemble huevos

    Divide the soft-scrambled eggs evenly among the 4 tortillas, placing the eggs on top of the cheese so the residual heat melts it slightly.

    Add avocado

    Top each portion of eggs with 3–4 thin slices of the ripe avocado (use all slices across the 4 tortillas). Sprinkle the remaining 3/4 tsp kosher salt and 1/4 tsp black pepper across the avocado lightly, if desired.

    Finish toppings

    Spoon about 2 tablespoons salsa roja or pico de gallo onto each tortilla (total 1/2 cup). Scatter chopped cilantro (about 1/2 tablespoon per tortilla) and sliced green onions evenly. Add a few drops of hot sauce if you like extra heat.

    Serve

    Fold or roll the tortillas and serve immediately with lime wedges on the side for squeezing over the assembled Huevos California.

Salsa & Extras

    If using store-bought salsa, taste and adjust seasoning with a pinch of salt or a squeeze of lime. If making quick pico, combine diced tomato, finely chopped onion, cilantro, a squeeze of lime, pinch of salt and a little jalapeño to taste. Serve alongside or spoon over the eggs as directed above.
