Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the diced onion and cook until translucent, about 4–5 minutes.

Add the minced garlic, cumin, and smoked paprika and cook 30–45 seconds until fragrant.

Add the drained red beans to the skillet along with 2–4 tablespoons of water (or broth) to loosen. Stir and gently mash about half the beans with the back of a spoon to create a chunky, spreadable texture. Cook 3–4 minutes until heated through. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Keep warm on low heat.
Enchilado (tomato) sauce

In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add 1 teaspoon minced garlic and cook 30 seconds until fragrant but not brown.

Pour in 1 cup tomato passata or crushed tomatoes. Stir in the chopped chipotle/adobo (or chipotle powder + adobo), 1/2 tsp dried oregano, 1/2 tsp chili powder, 1/2 tsp salt and 1/4 tsp sugar if using.

Bring the sauce to a gentle simmer, reduce heat to low, and cook 6–8 minutes until slightly thickened and flavors meld. Taste and adjust salt or heat. Keep warm.
Kuba bread & assembly

Preheat oven broiler or a skillet for toasting. Lightly butter or brush both sides of the Kuba bread halves with the 1 tablespoon softened butter or oil.

Toast the bread cut-side down in a hot skillet 2–3 minutes until golden and crisp, or place under broiler 2–3 minutes watching carefully so it doesn't burn. Keep warm.

Place each toasted half on serving plates. Spoon an even layer of the warm mashed red beans across each piece of bread (about 1/2 cup beans per plate).
Eggs & toppings

Make the lime sour cream: in a small bowl combine 1/4 cup sour cream with 1 tablespoon fresh lime juice and 1/8 teaspoon salt. Stir until smooth; set aside.

Heat a nonstick skillet over medium heat and add 1 tablespoon vegetable oil or butter. Crack 2 eggs into the pan (or 1 egg per plate) and fry sunny-side-up until whites are set but yolks remain runny, 3–4 minutes. For over-easy, flip and cook 20–30 seconds more. Season eggs lightly with salt and pepper.

Spoon 2–3 tablespoons of the warm enchilado tomato sauce over the bean layer on each bread half. Place a fried egg on top of each sauced bean mound.

Sprinkle about 1/4 cup grated Monterey Jack cheese over the hot eggs and sauce so it begins to melt. Dollop or drizzle lime sour cream over the top (about 1–2 tablespoons per plate).

Garnish with chopped cilantro if using and serve immediately with a lime wedge on the side for extra brightness.
