Prepare the Delicata Squash

Preheat the oven to 400°F (200°C). Slice the delicata squash in half, remove the seeds, and cut into half-moons. Toss with olive oil, salt, and pepper. Roast for 25-30 minutes until tender and slightly caramelized.

Cook the Farro Risotto

In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add chopped shallots and garlic, sauté until translucent. Add farro and stir for 2-3 minutes. Gradually add vegetable broth, one ladle at a time, stirring frequently until the farro is creamy and cooked through, about 25-30 minutes. Season with salt and pepper to taste.

Prepare the Kohlrabi and Sunchoke Chips

Using a mandoline or sharp knife, slice the kohlrabi and sunchokes thinly. Heat the remaining olive oil in a skillet over medium heat and fry the slices until golden and crispy, about 3-5 minutes. Drain on paper towels.

Combine Ingredients

Once the farro is cooked, stir in roasted delicata squash and grated Cretan graviera cheese until well combined. Adjust seasoning if needed.

Plate the farro risotto topped with sunchoke chips and garnish with fresh parsley. Enjoy your sitari!
