Method
Preparing the Portokalopita
Preheat the Oven
Preheat your oven to 180°C (350°F).
Prepare Phyllo Mixture
In a large bowl, tear the phyllo pastry into small pieces. Add the orange zest, orange juice, sugar, cinnamon, baking powder, eggs, olive oil, and milk. Mix until well combined.
Bake
Pour the mixture into a greased baking dish and bake for 45-50 minutes or until golden brown.
Making the Syrup
Combine Ingredients
In a saucepan, combine sugar, water, and orange juice. Bring to a boil and let it simmer for about 10 minutes until slightly thickened.
Pour Over Cake
Once the cake is out of the oven, immediately pour the syrup over the hot cake. Let it soak for at least 30 minutes.
Making the Manouri Ice Cream
Blend Ingredients
In a blender, combine manouri cheese, heavy cream, milk, sugar, and vanilla extract. Blend until smooth.
Chill and Freeze
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.
