Preparation Instructions
1. Curing the Tuna
In a bowl, mix the sea salt, sugar, and crushed black peppercorns. Rub this mixture over the albacore tuna fillets. Place the fillets in a shallow dish, cover with plastic wrap, and refrigerate for 24-48 hours.
2. Making the Savoro Sauce
In a small bowl, whisk together the white wine vinegar, olive oil, minced garlic, chopped parsley, and red pepper flakes until well combined. Set aside.
3. Preparing the Dandelions
Wash the fresh dandelion greens thoroughly and pat dry. In a mixing bowl, toss the dandelions with olive oil, lemon juice, and salt to taste.
4. Serving
Once the tuna has cured, slice it thinly and arrange it on a serving platter. Drizzle the savoro sauce over the tuna and sprinkle sesame seeds on top. Serve alongside the seasoned dandelion greens.
