Prepare the Pancake Batter
In a mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the eggs and then mix in the milk and olive oil. Combine the wet and dry ingredients until just mixed.
Cook the Pancakes
Heat a non-stick skillet over medium heat and grease it lightly with olive oil. Pour 1/4 cup of the pancake batter into the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
Prepare the Toppings
While the pancakes are cooking, chop the mint leaves and walnuts. Set aside. Prepare your serving plates with kalathaki cheese, merenda, and thyme honey.
Serve
Stack the pancakes on serving plates, drizzle with thyme honey, sprinkle with cinnamon, and top with chopped walnuts and mint leaves. Serve immediately.
