Add Tomatoes and Broth
Stir in the diced tomatoes, broth, salt, black pepper, bay leaves, and the cinnamon stick. Bring to a boil.
Braise the Lamb
Return the lamb shanks to the pot. Reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the lamb is tender and falls off the bone.
Cook the Orzo
Once the lamb is tender, remove it from the pot. Stir in the orzo and cook according to package instructions until al dente.
Serve
Serve the giouvetsi hot, topped with grated mizithra cheese.
