Sear the Lamb Shanks

In a large pot, heat olive oil over medium-high heat. Add the lamb shanks and sear until browned on all sides. Remove from the pot and set aside.

Sauté Aromatics

In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and sauté for an additional minute.

Add Tomatoes and Broth

Stir in the diced tomatoes, broth, salt, black pepper, bay leaves, and the cinnamon stick. Bring to a boil.

Braise the Lamb

Return the lamb shanks to the pot. Reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the lamb is tender and falls off the bone.

Cook the Orzo

Once the lamb is tender, remove it from the pot. Stir in the orzo and cook according to package instructions until al dente.

Finish the Dish

While the orzo cooks, shred the lamb meat from the bones. Once the orzo is cooked, return the lamb to the pot. Stir in the chopped parsley and adjust seasoning as needed.

Serve

Serve the giouvetsi hot, topped with grated mizithra cheese.
