    Prepare vegetables

    Wash and cut all vegetables into uniform, bite-size pieces so they cook evenly: broccoli and cauliflower into florets, carrots into 1/4-inch slices, bell pepper into 1/2-inch strips, zucchini halved lengthwise then sliced, snap peas trimmed, and onion thinly sliced.

    Mince aromatics

    Peel and mince the garlic and fresh ginger. Measure red pepper flakes, salt and pepper. Chop parsley and basil/chives for the vinaigrette; zest the lemon.

Cook Vegetables

    Heat a large heavy skillet or sauté pan over medium-high heat until hot (about 1–2 minutes). Add 1 tablespoon olive oil and the butter, swirl to coat and melt.

    Add the onion and carrots first. Sauté, stirring occasionally, until onion is translucent and carrots begin to soften, about 4–5 minutes.

    Push the onion and carrots to the side of the pan. Add the remaining 1 tablespoon olive oil. Add broccoli and cauliflower florets. Let them sear without moving for 2 minutes to develop color, then toss and cook another 2 minutes.

    Add red bell pepper, zucchini and snap peas. Stir to combine and cook until all vegetables are crisp-tender, about 3–4 more minutes. Total cook time should keep vegetables bright and slightly firm.

    When vegetables are nearly done, add minced garlic, minced ginger and red pepper flakes. Stir constantly for 30–45 seconds until fragrant—do not let garlic burn.

    Season with kosher salt and black pepper. Taste and adjust seasoning as needed. Remove pan from heat and transfer vegetables to a large bowl or serving platter to stop cooking.

Make Lemon-Herb Vinaigrette

    In a small bowl or jar, whisk together 3 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 1 teaspoon honey (or maple syrup), chopped parsley, chopped basil or chives, 1 teaspoon salt and 1/2 teaspoon black pepper until emulsified.

    Stir in grated lemon zest for brightness. Taste and adjust acid or salt: add a little more lemon juice if you prefer brighter acidity or more olive oil if too tangy.

Finish & Serve

    Pour the vinaigrette over the warm vegetables and toss gently to coat all pieces evenly. The warmth helps the flavors meld.

    Sprinkle toasted sliced almonds or chopped walnuts and additional chopped herbs, if desired.

    Serve immediately as a side or over cooked grains (rice, quinoa) or greens for a light main. Leftovers keep in an airtight container in the refrigerator for up to 3 days; reheat gently to avoid overcooking.
