    Toast coconut (optional)

    Preheat a small dry skillet over medium heat. Add coconut flakes and toast, stirring frequently, until golden and fragrant, about 2–3 minutes. Remove from heat and cool. Set aside for garnish or rim.

    If you prefer a frothier texture, chill the blender jar and ingredients briefly (10–15 minutes) before blending.

Blend

    Combine ingredients

    Add pineapple chunks (1.5 cups), coconut milk (1 cup), coconut water (1/2 cup), simple syrup or honey (1 tbsp), and fresh lime juice (1 tbsp) to the blender.

    Add ice

    Add 1 cup crushed ice or ice cubes to the blender. If you used frozen pineapple, reduce ice by half to avoid over-thinning.

    Blend until smooth

    Blend on high for 30–60 seconds, or until the mixture is silky and no large pieces of ice or pineapple remain. Stop and scrape down the sides once if needed. Taste and adjust sweetness or lime: add up to 1 additional tablespoon simple syrup or 1/2 tablespoon lime juice if desired.

    Prepare glass (optional rim): moisten the rim of a chilled glass with a lime wedge, then dip into toasted coconut flakes to coat the edge.

    Pour the blended Coconut Breeze into the prepared glass. Add a pineapple wedge on the rim and a mint sprig for aroma if using.

    Serve immediately with a straw. Stir briefly before drinking if separation occurs.
