Method

Cocktail

  1. 1

    Prepare glass (optional)

If you want a sugared rim, run the lime wedge around the rim of a chilled coupe or martini glass. Dip the rim into a shallow plate with granulated sugar to coat. Set the glass aside to dry while you make the cocktail.

  2. 2

    Hull and measure strawberries

Wash and hull the strawberries. For best texture and sweetness, remove any bruised parts. Measure 1 cup of hulled strawberries (about 6–8 medium berries).

  3. 3

    Combine ingredients

Place the hulled strawberries, light white rum, fresh lime juice, and simple syrup into a blender or a cocktail shaker if using crushed ice. Add 1.5 cups of ice to the blender (use slightly less if you prefer a looser drink).

  4. 4

    Blend

Blend on high for 20–30 seconds until the mixture is smooth and evenly icy. If you prefer a chunkier texture, pulse in 2–3 short bursts. Taste and adjust sweetness or acidity by adding an extra 1/4 oz simple syrup or 1/4 oz lime juice as needed.

  5. 5

    Strain (optional)

For an ultra-smooth daiquiri, pour the blended mixture through a fine-mesh strainer into a measuring cup or pitcher, pressing solids with the back of a spoon. Discard seeds and pulp left in the strainer.

  6. 6

    Serve

Pour the blended (and strained, if desired) daiquiri into the prepared chilled glass. Garnish with a strawberry slice or lime wheel on the rim.

  7. 7

    Notes

If fresh strawberries are not in season, use frozen strawberries and reduce ice to 1 cup. Adjust rum to your taste — 1.5 oz will be lighter, 2.5 oz stronger. Keep extra simple syrup on hand to sweeten as needed.
