Shrimp & Marinade

Method

Shrimp & Marinade

  1. 1

    Prepare shrimp

If your shrimp are frozen, thaw fully in the refrigerator or under cold running water and pat dry with paper towels. Remove any remaining veins or shells if needed; leave tails on for presentation if desired.

  2. 2

    Make marinade

In a medium bowl combine 2 tbs olive oil, 1 tbs fresh lemon juice, minced garlic, 1 tsp smoked paprika, 0.75 tsp kosher salt, 1 tsp black pepper, and 0.25 tsp red pepper flakes (optional). Whisk until blended.

  3. 3

    Marinate shrimp

Add 1 lb shrimp to the bowl and toss to coat evenly. Let sit at room temperature for 10–15 minutes or refrigerate for up to 30 minutes. Do not marinate longer than 30 minutes for acidic marinades or the shrimp may become mushy.

Cooking & Finish

  1. 4

    Heat pan

Place a large skillet over medium-high heat. When hot, add 1 tbs unsalted butter and 1 tbs olive oil (from the marinade left in the bowl if present) and swirl to coat the pan; this combination helps prevent the butter from burning.

  2. 5

    Cook shrimp

Add the marinated shrimp in a single layer (do not crowd the pan; cook in two batches if necessary). Cook undisturbed for 1.5–2 minutes until the underside turns pink and slightly golden. Flip each shrimp and cook another 1–2 minutes until opaque throughout and firm to the touch. Total cook time about 3–4 minutes depending on size. Avoid overcooking — shrimp become rubbery if cooked too long.

  3. 6

    Finish and garnish

Remove the skillet from heat, sprinkle chopped fresh parsley over the shrimp and squeeze the lemon wedges over them. Toss gently to coat. Taste and adjust seasoning with a pinch of salt or more lemon if desired. Serve immediately.
