Sushi Rice

    Rinse rice

    Place the 2 cups short-grain sushi rice in a fine-mesh strainer and rinse under cold running water, swirling with your hand, until the water runs nearly clear (about 6–8 rinses). This removes excess starch for proper stickiness.

    Soak and cook

    Transfer rinsed rice to a medium saucepan. Add 2.2 cups water. Let rice soak 20–30 minutes at room temperature if time allows. Cover, bring to a gentle boil over medium-high heat, then reduce heat to low and simmer, covered, for 15 minutes. Remove from heat and let sit, covered, for 10 minutes to steam.

    Season rice

    While rice cooks, warm 3 tbs rice vinegar, 1.5 tbs sugar and 3/4 tsp salt in a small saucepan or microwave just until sugar dissolves (do not boil). Transfer cooked rice to a wide shallow bowl (hangiri or large bowl). Pour seasoned vinegar evenly over rice. Using a wooden or plastic spatula, fold rice gently with a cutting motion to mix and fan with a hand or fan to cool quickly until slightly warm (about 5–8 minutes). Coverage tip: avoid smashing—goal is glossy, separate grains that stick together.

Filling & Assembly

    Prepare fillings

    Slice smoked salmon into long thin strips ~1/2 inch wide and length similar to the nori sheet. Cut cream cheese into long batons roughly 1/2 inch by 3 inches (or use a piping bag to pipe if preferred). Julienne cucumber into thin matchsticks and pat dry with paper towel to remove excess moisture. Have scallions thinly sliced and sesame seeds toasted if using.

    Set up rolling station

    Place bamboo mat on work surface and cover with plastic wrap to keep it clean. Lay one nori sheet shiny-side down on the mat. Keep a small bowl of water nearby to wet your fingers—this prevents rice from sticking while spreading.

    Spread rice on nori

    With wet fingers, pick up about 1/2 cup to 3/4 cup of sushi rice (adjust by thickness preference). Gently spread a thin, even layer of rice over the nori, covering about 3/4 of the sheet lengthwise; leave the far top 1 inch of nori free of rice to seal the roll. Do not pack rice tightly—keep it slightly airy so the roll compresses properly.

    Add fillings

    Arrange a row of smoked salmon strips across the rice about 1 inch from the bottom edge. Place the cream cheese batons alongside the salmon. Add a thin line of cucumber matchsticks and a sprinkle of sliced scallions. If you like sesame seeds, scatter a few across the filling.

    Roll the sushi

    Lift the bamboo mat edge nearest you and begin to roll the nori over the fillings, tucking the fillings with your fingers so they stay compact. Roll forward firmly but gently, applying even pressure with the mat to form a tight cylinder. When you reach the uncovered 1-inch nori edge, wet it lightly with water and finish sealing the roll.

    Shape and rest

    Use the mat to gently press and shape the roll, forming a slightly rounded or square cross-section depending on preference. Let the roll rest 1–2 minutes seam-side down to set.

    Slice the roll

    With a very sharp knife dampened with water (and wiped between cuts), slice the roll into 6–8 equal pieces. Clean and wet the knife between cuts to keep slices neat. For 4 nori sheets you should end up with 24–32 pieces depending on slice count.

    Plate and garnish

    Arrange pieces on a serving plate. Garnish with extra scallions, a light sprinkle of toasted sesame seeds, and serve with soy sauce, wasabi, and pickled ginger on the side.

    Storage: Consume sushi within a few hours for best texture. If making ahead, store uncut rolls covered in plastic wrap in refrigerator up to 6 hours; note rice will firm and nori will soften.

    Variations: Substitute smoked salmon with lox, or use a lightly seared salmon strip for a different texture. For a maki-style exterior with rice outside (uramaki), place rice on the nori then flip nori so fillings are on nori side, coat rice with sesame seeds before adding fillings and rolling.
