Tofu & Marinade

    Press and cube tofu

    Drain the 5 oz extra-firm tofu and press for 10–15 minutes to remove excess water using a clean towel and a weight. Once pressed, cut tofu into roughly 3/4-inch cubes (bite-size for kids).

    Marinate

    In a small bowl whisk together 1 tbsp low-sodium soy sauce, 1 tbsp water, 1 tsp honey, 1 tsp sesame oil, 1 tsp minced ginger, 1 tsp minced garlic and 1 tsp cornstarch until smooth. Add the tofu cubes and gently toss to coat. Let sit 5–10 minutes while preparing the sauce and rice (short marination is fine for a small kids portion).

    Make the teriyaki sauce by whisking 2 tbsp low-sodium soy sauce, 2 tbsp water, 1 tbsp honey, 1 tsp rice vinegar, 1 tsp sesame oil and 1 tsp cornstarch in a small bowl until cornstarch is dissolved and mixture is smooth. Set aside.

For Cooking & Serving

    Pan-fry tofu

    Heat 1 tsp neutral oil in a nonstick skillet over medium heat. Remove tofu from the marinade (reserve any excess marinade) and arrange cubes in a single layer. Cook 3–4 minutes without moving to get a golden crust, then gently flip and cook another 2–3 minutes until the second side is golden. For a smaller kids portion keep pieces bite-sized and avoid high heat to prevent burning.

    Add sauce

    Reduce heat to low. Pour the prepared teriyaki sauce into the pan with the tofu, add any reserved marinade, and gently toss or spoon the sauce around so the cubes are coated. Continue cooking 1–2 minutes until the sauce thickens and becomes glossy. If sauce gets too thick, add 1 tsp water to loosen. Remove from heat.

    Assemble

    Place 1 cup cooked rice on a kid-sized plate. Arrange the sauced tofu (all cooked cubes) beside the rice and add 1/2 cup steamed mixed vegetables. Spoon any remaining sauce from the pan over the rice and tofu. Sprinkle 1/4 tsp toasted sesame seeds and 1 tsp sliced green onion on top if using (omit sesame for children with allergies).

    Serve warm

    Allow to cool slightly to a safe toddler/kid temperature and serve. Store any leftovers in an airtight container in the refrigerator up to 2 days.
