1. Prepare the Veal

Pound the veal cutlets to about 1/4 inch thickness. Season both sides with salt and black pepper.

In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs in the third.

3. Bread the Veal

Dredge each veal cutlet in flour, shaking off excess. Dip into beaten eggs, then coat with breadcrumbs, pressing to adhere.

4. Fry the Cutlets

In a large skillet over medium heat, heat olive oil. Add breaded veal cutlets and fry until golden brown, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

In a food processor, blend blanched broccoli rabe, garlic, olive oil, pecorino cheese, salt, and pepper until smooth.

6. Prepare Creamed Mushrooms

In a separate pan, sauté sliced mushrooms in olive oil until golden, then add cream and simmer until thickened. Season with salt and pepper.

7. Serve

Plate the veal cutlets, top with broccoli rabe pesto, and serve alongside creamed mushrooms. Garnish with additional pecorino cheese.
