Cobbler

Method

Preparation

  1. 1

    Prepare the Fruit Filling

In a large bowl, combine the strawberries and rhubarb. Sprinkle with granulated sugar and mix well. Let it sit for about 15 minutes to release the juices.

  2. 2

    Make the Cobbler Batter

In another bowl, whisk together the flour, baking powder, salt, and cinnamon. Add the milk and melted butter, stirring until just combined.

  3. 3

    Assemble the Cobbler

Preheat your oven to 350°F (175°C). Grease a baking dish. Pour the fruit mixture into the bottom of the dish. Spoon the cobbler batter over the fruit evenly.

  4. 4

    Add the Crumble Topping

In a small bowl, combine brown sugar, flour, and some melted butter (about 2 tablespoons). Sprinkle this mixture over the batter.

  5. 5

    Bake

Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and the fruit is bubbly.

  6. 6

    Serve

Let it cool slightly before serving. Serve warm with a scoop of vanilla ice cream on top.
