Cooking the Coconut Rice

    Prepare the Coconut Rice

    In a medium saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Preparing the Vegetables

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Then add bok choy, red bell pepper, and shiitake mushrooms. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender. Season with salt and pepper to taste.

Cooking the Tuna

    Sear the Tuna

    Pat the tuna steaks dry and season with salt and pepper. In a skillet over high heat, add sesame oil. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for medium-rare, or until desired doneness. Remove from heat and sprinkle with black sesame seeds.

Plating

    Serve

    On a plate, serve a scoop of coconut rice, a portion of sautéed vegetables, and the seared tuna. Add a small dollop of wasabi on the side for dipping.
