Prepare the Potatoes
Peel the Russet potatoes and cut them into uniform 1/4-inch thick slices. Rinse the slices in cold water to remove excess starch and pat them dry with a kitchen towel.

First Fry
In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C). Fry the potato slices in batches for about 4-5 minutes until they are tender but not browned. Remove them from the oil and let them drain on paper towels.

Second Fry
Increase the oil temperature to 375°F (190°C). Fry the partially cooked potatoes in batches again for 2-3 minutes until they puff up and turn golden brown. Remove them from the oil and drain on paper towels.

Season and Serve
Sprinkle the hot pommes soufflé with salt to taste and serve immediately as a crispy side dish or snack.
