Slider Preparation

    Caramelize the Onions

    Thinly slice the onions. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions and cook slowly, stirring occasionally, until they are deeply caramelized, about 20-25 minutes. Set aside.

    Prepare the Béchamel Sauce

    In a saucepan, melt the remaining tablespoon of butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the heavy cream, stirring constantly until the sauce thickens. Add nutmeg and white pepper, season with salt to taste. Set aside.

    Form the Sliders

    In a bowl, combine ground Kobe beef, salt, and black pepper. Form into 8 equal-sized patties.

    Cook the Sliders

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

    Assemble the Sliders

    On each slider bun, place a beef patty with melted cheddar, a spoonful of caramelized onions, and drizzle with béchamel sauce. Top with the other half of the bun and serve immediately.
