Method

Preparing the Warm Potato Salad

    Cook the Potatoes

    Boil the Yukon Gold potatoes in salted water until fork-tender. Drain and let cool slightly.

    Sauté the Onions

    In a large skillet, heat olive oil over medium heat. Add the diced red onion and sauté until translucent.

    Assemble the Salad

    Cut the potatoes into bite-sized pieces and add to the skillet with the onions. Stir in parsley, salt, and pepper. Cook until warm.

Cooking the King Salmon

    Prepare the Salmon

    Preheat the grill or skillet to medium-high heat. Season the salmon fillets with olive oil, salt, and pepper.

    Cook the Salmon

    Grill or pan-sear the salmon for about 4-5 minutes on each side, or until cooked through and flaky.

Making the Creamed Corn

    Heat the Cream

    In a saucepan, melt butter over medium heat. Add corn and sauté for a few minutes.

    Stir in heavy cream, salt, and pepper. Simmer until thickened, about 5-7 minutes.

Plating

    On a plate, place a generous scoop of warm potato salad, top with a salmon fillet, add a side of creamed corn, and garnish with lovage leaves.
