Method

Preparing the Lamb Chops

    Marinating the Lamb

    In a bowl, combine chopped rosemary, thyme, minced garlic, olive oil, salt, and black pepper. Rub the mixture over the lamb chops and let marinate for at least 30 minutes.

    Cooking the Lamb

    Preheat a grill or skillet over medium-high heat. Grill the lamb chops for about 3-4 minutes per side for medium-rare, or until the desired doneness. Remove from heat and let rest.

Making the Mashed Potatoes

    Boiling the Potatoes

    In a large pot, boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.

    Mashing the Potatoes

    Add the butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and black pepper to taste.

Preparing the Bordelaise Sauce

    Making the Sauce

    In a saucepan, sauté the minced shallots in butter over medium heat until translucent. Add red wine and bring to a boil. Reduce heat and simmer until reduced by half.

    Finishing the Sauce

    Add beef stock and fresh thyme. Continue to simmer until the sauce thickens slightly. Season with salt and black pepper to taste.
