    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and simmer for about 45 minutes or until tender. Remove from the pot and let cool.

    Cook the Potatoes

    Peel and dice the potatoes. In a saucepan, boil the potatoes until tender, about 15 minutes. Drain and toss with olive oil, paprika, salt, and pepper.

    Grill the Octopus

    Preheat your grill to medium-high heat. Cut the cooled octopus into tentacles, brush with olive oil, and season with salt and pepper. Grill for about 3-4 minutes on each side until charred.

    Char the Lemon

    Cut the lemon in half and place it cut-side down on the grill for 2-3 minutes until charred.

    Assemble the Dish

    On a serving plate, arrange a bed of arugula, top with grilled octopus, spiced potatoes, kalamata olives, and shaved parmesan. Squeeze the charred lemon over the top before serving.
