    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Peel and thinly slice the potatoes. Set aside.

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the fresh thyme and rosemary to the skillet and cook for another 2 minutes until fragrant.

    In a large mixing bowl, combine the sliced potatoes, sautéed onion mixture, heavy cream, salt, and black pepper. Mix well to coat the potatoes evenly.

    Layer half of the potato mixture in a greased baking dish. Crumble half of the goat cheese over the layer, then repeat with the remaining potatoes and goat cheese.

    Sprinkle the grated Parmesan cheese on top of the assembled dish.

    Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
