Sticky Pudding

Method

Preparation

  1. 1

    Soak the Figs

In a bowl, combine the chopped dried figs and boiling water. Let it soak for about 20 minutes until the figs are plump. Drain and set aside.

  2. 2

    Make the Batter

Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  3. 3

    Combine Dry Ingredients

In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, mixing until just combined. Fold in the soaked figs.

  4. 4

    Bake the Pudding

Pour the batter into a greased baking dish. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  5. 5

    Prepare Candied Walnuts

While the pudding is baking, prepare the candied walnuts by heating 1 cup of walnuts in a skillet over medium heat. Add 1/2 cup of sugar and cook, stirring constantly, until the sugar melts and coats the walnuts. Remove from heat and let cool on parchment paper.

  6. 6

    Serve with Ice Cream

Once the pudding is done, let it cool slightly before serving. Serve warm with crème fraîche ice cream on the side and garnished with candied walnuts.
