Prepare the Beef
Wrap the beef tenderloin in plastic wrap and freeze for about 30-45 minutes until firm. This makes it easier to slice thinly.

Slice the Beef
Using a sharp knife, slice the beef into very thin slices. Arrange the slices on a large serving plate in a single layer.

Prepare the Toppings
In a small bowl, combine the arugula, capers, red onion, lemon olive oil, fresh lemon juice, salt, and black pepper. Toss gently to combine.
