While the quinoa is cooking, chop the cherry tomatoes, cucumber, and red bell pepper into small pieces. Place them in a large mixing bowl.
3. Mix Salad
Once the quinoa is cooked and cooled slightly, add it to the bowl with the chopped vegetables. Crumble the feta cheese over the top.
4. Dress the Salad
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.
5. Garnish and Serve
