1. Cook Quinoa

Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil over medium heat, then reduce to low and cover. Cook for about 15 minutes, or until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

2. Prepare Vegetables

While the quinoa is cooking, chop the cherry tomatoes, cucumber, and red bell pepper into small pieces. Place them in a large mixing bowl.

3. Mix Salad

Once the quinoa is cooked and cooled slightly, add it to the bowl with the chopped vegetables. Crumble the feta cheese over the top.

4. Dress the Salad

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.

5. Garnish and Serve
