Prepare the filling
In a large mixing bowl, combine the ground pork sausage, smoked cheddar cheese, Monterey Jack cheese, minced garlic, chopped parsley, smoked paprika, black pepper, and salt. Mix until well combined.

Preheat your oven to 200°C (400°F). Roll out puff pastry on a lightly floured surface until it's about 1/8 inch thick. Cut into rectangles (about 10x6 cm).
