    Prepare the Potatoes

    Boil the crispy potatoes until tender, drain, and then sauté them in a pan with a bit of butter until crispy. Season with salt and black pepper.

    Cook the Bacon

    In a separate skillet, cook the house bacon over medium heat until crispy. Remove and set aside on paper towels to drain excess fat.

    Fry the Eggs

    In the same skillet used for bacon, crack the eggs gently and cook them sunny side up until the whites are set but the yolks are still runny. Season with salt and pepper.

    Prepare the Croissant

    Warm the croissant in the oven or a toaster for a few minutes until crisp.

    Serve

    On a plate, arrange the crispy potatoes, place the sunny side up eggs on top, add the crispy bacon, and serve with the warm croissant on the side.
