    In a large pot, heat the olive oil over medium heat. Add the diced Andouille sausage and cook until browned, about 5 minutes.

    Stir in the canned diced tomatoes, seafood stock, dried thyme, bay leaves, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer.
