Cooking Instructions
- 1
Prepare the Marinade
In a blender or food processor, combine the Scotch bonnet peppers, garlic cloves, ginger, green onions, thyme, allspice, cinnamon, nutmeg, brown sugar, soy sauce, lime juice, salt, and black pepper. Blend until smooth.
- 2
Marinate the Chicken
Place the chicken thighs in a large bowl or a resealable plastic bag. Pour the marinade over the chicken, ensuring that it is well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grill the Chicken
Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Serve
Once cooked, remove the chicken from the grill and let it rest for a few minutes. Serve hot with your favorite sides.
