    Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

    In one bowl, mix the flour, salt, black pepper, and cayenne pepper. In a second bowl, pour the buttermilk. In a third bowl, place the cornmeal.

    Dip each tomato slice first into the flour mixture, then into the buttermilk, and finally coat with cornmeal. Make sure the slices are well-coated.

    In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.
