    Prepare the Grits

    In a large pot, bring 4 cups of water to a boil. Add salt, then slowly stir in the grits. Reduce heat to low and cover. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Stir in butter before serving.

    Prepare the Fish

    While the grits are cooking, prepare the fish. Rinse the fish fillets and pat dry. In a shallow dish, combine cornmeal, black pepper, and cayenne pepper. Dredge each fillet in the cornmeal mixture, coating both sides.

    In a large skillet, heat the oil over medium-high heat. Once hot, add the coated fish fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove from skillet and drain on paper towels.
