    Prepare the Ingredients

    Wash the collard greens thoroughly to remove any dirt. Remove the tough stems and chop the leaves into bite-sized pieces. Dice the onion and mince the garlic.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Add the Smoked Turkey

    Place the smoked turkey leg into the pot with the sautéed onions and garlic. Pour in the chicken broth and bring to a boil.

    Cook the Collard Greens

    Once boiling, add the chopped collard greens to the pot. Stir in the salt, black pepper, and red pepper flakes. Reduce the heat to low and cover. Simmer for about 30-35 minutes, until the greens are tender.
