    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add salt and slowly whisk in the corn grits. Reduce the heat to low and cook, stirring frequently, for about 20-25 minutes until the grits are thick and creamy. Stir in the milk and butter, and cook for an additional 5 minutes. Season with salt and pepper to taste.

    Prepare the Catfish

    In a bowl, mix flour, cornmeal, paprika, cayenne pepper, salt, and black pepper. Dredge each catfish fillet in the mixture until fully coated.

    Fry the Catfish

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
