Method

Directions

  1. 1

    Prepare the Black-eyed Peas

Rinse the black-eyed peas under cold water and remove any debris. Soak them in water for at least 4 hours or overnight for quicker cooking.

  2. 2

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

  3. 3

    Add the Turkey and Seasonings

Add the smoked turkey leg to the pot, followed by the soaked black-eyed peas, chicken broth, bay leaves, thyme, black pepper, and salt. Stir to combine.

  4. 4

    Cook the Mixture

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours or until the peas are tender and the turkey is cooked through.

  5. 5

    Finish and Serve

Remove the turkey leg from the pot, shred the meat, and return it to the mixture. Adjust the seasoning with more salt and pepper if needed. Serve warm.
