    Marinate the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and add flavor.

    Prepare the Coating

    In a shallow dish, combine the cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well to ensure an even coating.

    Coat the Catfish

    Remove the catfish from the buttermilk and let excess liquid drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well coated on both sides.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

    Cook the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. If blackening, place the fillets in a cast-iron skillet over high heat for 3-4 minutes on each side, until a dark crust forms.

    Drain and Serve

    Remove the catfish from the skillet and place on paper towels to drain excess oil. Serve hot with lemon wedges and your choice of sides.
