Cooking Instructions

1

Prepare the Black-eyed Peas

Rinse the black-eyed peas under cold water and soak them in water overnight. Drain and set aside.

2

Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, bell pepper, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

3

Add Turkey and Broth

Add the smoked turkey leg to the pot, followed by the vegetable broth. Bring to a boil.

4

Combine Ingredients

Add the soaked black-eyed peas, bay leaves, thyme, black pepper, and salt to the pot. Stir well.

5

Simmer

Reduce the heat to low, cover, and simmer for about 1 hour or until the peas are tender and the turkey is cooked through.

6

Serve

Remove the turkey leg, shred the meat, and return it to the pot. Discard the bay leaves. Serve hot.
