Prepare Peanut Brittle

Make the Peanut Brittle
In a saucepan, combine sugar, corn syrup, and peanuts over medium heat. Stir until the mixture boils. Allow to boil for about 5 minutes without stirring. Remove from heat and quickly stir in butter, baking soda, and salt. Pour onto a greased baking sheet and let cool. Once cool, break into pieces.

Make the Vinaigrette
In a bowl, whisk together olive oil, lemon juice, truffle oil, Dijon mustard, honey, salt, and black pepper until well combined.
Assemble Salad

Combine Ingredients
In a large bowl, add the spring mix, seasonal fruit, and fresh herbs. Tear the burrata into pieces and add on top. Drizzle with the truffled lemon vinaigrette and toss gently to combine.

Serve
Top the salad with pieces of the spiced peanut brittle before serving.
