Method
Prepare the Crispy Potatoes
Roast the Potatoes
Preheat the oven to 425°F (220°C). Toss the halved baby potatoes with olive oil, rosemary, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
Cook the Brown Butter BBQ Shrimp
Brown the Butter
In a skillet, melt the unsalted butter over medium heat. Continue cooking until the butter turns brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.
Add Shrimp
Add the shrimp to the skillet along with the BBQ sauce, smoked paprika, garlic powder, salt, and black pepper. Cook for 3-4 minutes, or until the shrimp are pink and cooked through.
Make the Cocktail Sauce Vinaigrette
Combine Ingredients
In a small bowl, whisk together the cocktail sauce, apple cider vinegar, olive oil, Worcestershire sauce, and hot sauce to taste. Adjust seasoning as needed.
