Fried Chicken

Marinate Chicken
In a large bowl, combine the chicken breasts and buttermilk. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare Flour Mixture
In a shallow dish, mix together the all-purpose flour, paprika, salt, and black pepper.

Fry Chicken
Heat oil in a large skillet over medium-high heat. Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture. Fry chicken until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Assemble
On a serving plate, layer romaine lettuce, followed by fried chicken, topped with cheddar-jack cheese, tomatoes, pickled onions, hard-boiled eggs, jicama, and crispy tortilla strips.

In a medium bowl, combine black beans, corn kernels, finely chopped red onion, cilantro, lime juice, and salt. Mix well and adjust seasoning to taste.
