Beef Patties

Prepare the Beef Patties
In a mixing bowl, combine the Wagyu beef, salt, and black pepper. Gently mix with your hands until just combined, being careful not to overwork the meat. Divide the beef into two equal portions (4 oz each) and shape them into patties.

Cherry Pepper Relish

Make the Relish
In a bowl, combine the chopped cherry peppers, red onion, olive oil, apple cider vinegar, and salt. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.
Garlic Aioli

Prepare the Aioli
In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, and salt. Stir until well combined. Adjust seasoning to taste.
Assembly

Assemble the Burger
Toast the burger buns if desired. Spread a generous amount of garlic aioli on the bottom bun, place the melted cheeseburger patty on top, add a spoonful of cherry pepper relish, and top with the other half of the bun. Serve immediately.
