Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 teaspoon of salt. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes or until the grits are thick and creamy.

    Add Butter and Cheese

    Once the grits are cooked, stir in 2 tablespoons of butter and 1 cup of cheddar cheese until melted and fully incorporated. Keep warm on low heat.

Shrimp & Sauce Preparation

    Cook the Bacon

    In a large skillet, cook 4 slices of bacon over medium heat until crispy. Remove and drain on paper towels, leaving the bacon fat in the skillet.

    Sauté Vegetables

    In the same skillet with the bacon grease, add 2 tablespoons of olive oil. Add 1 cup of sliced mushrooms and 1 medium chopped bell pepper. Sauté for about 5-7 minutes until softened.

    Add Garlic and Shrimp

    Stir in 2 minced garlic cloves and cook for 1 minute until fragrant. Add 1 pound of peeled and deveined shrimp, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Cook for about 3-4 minutes until the shrimp are pink and opaque.

    Deglaze with White Wine

    Pour in 1 cup of white wine to deglaze the pan, scraping up any browned bits from the bottom. Cook for an additional 3-4 minutes until the sauce has reduced slightly.

    Finish the Dish

    Crumble the cooked bacon and add it back to the skillet along with 2 tablespoons of chopped parsley. Stir to combine and remove from heat.
