    Cook the Meat

    In a large pot, add 2 cups of pork shoulder and 1 cup of pork liver. Pour in 4 cups of water. Bring to a boil, then reduce heat and simmer for about 1 hour until the meats are tender.

    Prepare the Onion

    While the meat is cooking, finely chop 1 medium onion.

    Shred the Cooked Meat

    Once the meat is tender, remove it from the pot and let it cool slightly. Shred or chop the meat into small pieces.

    Make the Scrapple Mixture

    In the same pot with the remaining broth, add the shredded meat, chopped onion, 1 cup of cornmeal, 1 tsp salt, 1 tsp black pepper, 1 tsp thyme, 1 tsp garlic powder, and 1 tsp paprika. Stir well to combine.

    Cook the Mixture

    Cook the mixture over medium heat, stirring constantly for about 10-15 minutes until it thickens and pulls away from the sides of the pot.

    Set and Cool

    Pour the mixture into a greased loaf pan and smooth the top. Allow it to cool completely at room temperature, then refrigerate for at least 2 hours until firm.

    Slice the Scrapple

    Once the scrapple is firm, remove it from the loaf pan and slice it into 1/2-inch thick pieces.

    Fry the Scrapple

    In a frying pan, heat 2 tablespoons of oil or butter over medium heat. Place the sliced scrapple in the pan and fry for 4-5 minutes on each side until golden brown and crispy.
