    Prepare the Casings

    Soak the pork casings in cold water for about 30 minutes to soften them. Rinse them thoroughly under cold running water to remove any salt.

    Mix the Meat

    In a large mixing bowl, combine the ground pork and ground beef. Mix well to ensure even distribution.

    Add Seasonings

    Add salt, black pepper, garlic powder, onion powder, paprika, dried thyme, and red pepper flakes to the meat mixture. Mix thoroughly until all spices are well incorporated.

    Gradually add the cold water to the meat mixture, mixing continuously until the mixture is sticky and well combined.

Stuffing

    Stuff the Sausages

    Using a sausage stuffer, carefully slide one end of the soaked casings onto the stuffer tube. Tie a knot at the end of the casing. Fill the casing with the meat mixture, being careful not to overstuff. Twist the sausages into 6-inch links and tie off the ends.
