Preparing the Quiche Crust

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    After chilling, roll out the dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish, pressing it into the bottom and sides. Trim any excess dough. Prick the bottom with a fork and refrigerate while you prepare the filling.

Preparing the Quiche Filling

    Caramelize the Onions

    In a skillet over medium heat, add a tablespoon of olive oil. Add the sliced onions and cook slowly, stirring occasionally, until they are golden brown, about 15-20 minutes. Remove from heat and set aside.

    Cook the Chorizo and Vegetables

    In the same skillet, add the chorizo and cook until browned. Add the sliced mushrooms and cook until softened. Finally, add the chopped spinach and cook until wilted. Mix in the caramelized onions, salt, and pepper. Remove from heat and let the mixture cool slightly.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs and milk until well combined. Season with a pinch of salt and black pepper.

    Combine the Filling

    Once the chorizo and vegetable mixture has cooled slightly, combine it with the egg mixture and shredded gouda cheese. Stir until evenly mixed.

Assembling and Baking the Quiche

    Assemble the Quiche

    Preheat the oven to 180°C (350°F). Pour the filling into the prepared crust, spreading it evenly.

    Bake the Quiche

    Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top. Allow it to cool for a few minutes before slicing.

Preparing the Side Mixed Green Salad

    Toss the Salad

    In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss gently to combine.
