Preparing the Quiche Crust

Make the Dough
In a large bowl, combine the all-purpose flour and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preparing the Quiche Filling

Caramelize the Onions
In a skillet over medium heat, add a tablespoon of olive oil. Add the sliced onions and cook slowly, stirring occasionally, until they are golden brown, about 15-20 minutes. Remove from heat and set aside.

Combine the Filling
Once the chorizo and vegetable mixture has cooled slightly, combine it with the egg mixture and shredded gouda cheese. Stir until evenly mixed.
Assembling and Baking the Quiche

Assemble the Quiche
Preheat the oven to 180°C (350°F). Pour the filling into the prepared crust, spreading it evenly.

Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top. Allow it to cool for a few minutes before slicing.

Toss the Salad
In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss gently to combine.
