Method

Fries

  1. 1

    Preparing the Potatoes

Start by peeling the Russet potatoes and cutting them into fries. Rinse the fries in cold water to remove excess starch.

  2. 2

    Soaking the Fries

Soak the cut fries in a bowl of cold water for at least 30 minutes to achieve a crispier texture.

  3. 3

    Heating the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 4

    Frying the Potatoes

Drain and pat the fries dry. Carefully add the fries to the hot oil in batches and fry for 5-7 minutes or until golden brown. Remove and drain on paper towels, sprinkling with salt immediately.

Onion Gravy

  1. 5

    Sautéing the Onions

In a saucepan, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes.

  2. 6

    Making the Gravy

Sprinkle the flour over the caramelized onions and stir for about 2 minutes to cook the flour slightly. Gradually whisk in the broth, ensuring there are no lumps.

  3. 7

    Seasoning the Gravy

Add Worcestershire sauce and black pepper. Bring the mixture to a simmer and cook for about 5-10 minutes, until the gravy thickens to your desired consistency.

Assembly

  1. 8

    Assembling the Poutine

Place a generous serving of fries on a plate, spoon the hot onion gravy over the fries, and top with cheddar cheese curds. Serve immediately and enjoy!
